Sprinkle 560g bitter melon slices with 2 tsp salt, let sit 5 minutes to draw out bitterness, then squeeze gently and rinse under cold water. Crush 60g roasted peanuts coarsely. Halve 200g cherry tomatoes. Measure lime juice, soy sauce, palm sugar, and ready garlic and bird chillies.
Build
Pound 10 garlic cloves and 6 Thai bird chillies in a mortar off heat 30 seconds to a coarse paste. Stir in 60ml lime juice, 40ml light soy sauce, and 40g palm sugar, stirring 30 seconds until sugar dissolves into a tangy-sweet-spicy dressing.
Toss and plate
Off heat, toss prepared bitter melon and cherry tomatoes with the dressing 60 seconds until evenly coated. Divide between two plates and scatter crushed peanuts, 60g crispy fried shallots, and 40g coriander leaves across the top. Serve immediately.
