Prep
Cut 360g lamb shoulder into 2cm cubes. Mince 4 garlic cloves finely. Combine lamb with 3 tsp ground cumin, 1.5 tsp chilli flakes, 1 tsp Sichuan pepper, garlic, 2 tbsp soy sauce, 2 tbsp oil, 1 tsp salt, and 0.5 tsp white pepper. Mix well and marinate 20 minutes. Meanwhile, mix dipping sauce: 2 tbsp black vinegar, 2 tsp soy sauce, 2 small fresh chillies finely sliced.
Grill
Thread marinated lamb onto 8–10 skewers. Heat grill or griddle pan over high heat until smoking hot. Grill skewers 2–3 minutes per side, turning once, until charred at edges and just cooked through with slight pink centre.
Plate
Serve grilled skewers immediately over flatbread with dipping sauce alongside.
