Prep
Combine 250ml milk, 30g caster sugar, lemon peel, and cinnamon stick in a saucepan. Heat medium 4 minutes until steaming and sugar dissolves. Cover, steep off heat 10 minutes. Discard peel and stick. Pour warm infused milk into a shallow dish. Soak bread slices 2 minutes per side until saturated but holding shape. Drain on a plate. Beat 2 eggs in a second shallow dish.
Fry 1
Dip each milk-soaked bread slice fully into beaten egg, coating both sides evenly.
Fry 2
Heat 4 tbsp sunflower oil in a large frying pan over medium heat until shimmering. Fry 2 torrijas at a time 90 seconds per side until deep golden and crisp at edges. Drain briefly on kitchen paper.
Finish
While torrijas cool slightly, combine 1 tbsp caster sugar and 0.5 tsp ground cinnamon in a bowl. Warm 3 tbsp honey in a small pan 30 seconds until loose and pourable.
Plate
Arrange 2 torrijas per person on warm plates. Drizzle generously with warm honey, dust with cinnamon sugar, and serve immediately.
