Tex-Mex Loaded Beef Nachos
A Tex-Mex game day classic, tortilla chips loaded with spiced ground beef, melted cheddar, black beans, jalapeños, sour cream, and fresh guacamole.

Prep
Dice 1 white onion finely, mince 2 garlic cloves, drain and rinse 100g black beans, mash 2 ripe avocados with 1 tbsp lime juice and a pinch of salt. Have 200g tortilla chips, 150g grated cheddar, 3 tbsp pickled jalapeños, and 4 tbsp sour cream ready.
Sear
Heat 1 tbsp vegetable oil in a skillet over high heat. Add 300g beef mince, break it up, cook 5–6 minutes until deeply browned. Add diced onion, cook 3 minutes until softened.
Bloom
Add minced garlic, 1 tsp chipotle chilli powder, 1 tsp smoked paprika, 0.5 tsp cumin, and 0.5 tsp salt. Cook 1 minute, stirring, until fragrant.
Build
Spread tortilla chips in a single layer on a large ovenproof tray. Spoon spiced beef evenly over chips. Scatter black beans and pickled jalapeños over beef, then cover with grated cheddar.
Bake
Place in a preheated 200°C oven for 8–10 minutes until cheese is fully melted and beginning to bubble. Watch for bubbling cheese as doneness cue.
Plate
Remove nachos from oven. Dollop guacamole and sour cream over the top, scatter spring onions over, and serve directly from the tray.
