Instructions
Prep
Finely chop 240g deli turkey, 20g dried cranberries, 1.5 tbsp celery, and 1 tbsp shallot. Zest 0.5 orange and juice it. Finely chop 2 tbsp fresh sage, 1.5 tbsp parsley, and 1 tbsp thyme. In a small bowl, whisk 90g Greek yogurt, 1 tbsp mayonnaise, 1 tbsp Dijon mustard, 1.5 tsp apple cider vinegar, orange zest, orange juice, 0.25 tsp salt, and 0.25 tsp black pepper until smooth.
Build
Add chopped turkey, cranberries, sage, parsley, thyme, celery, and shallot to the dressing. Smash together with a fork until evenly combined but still chunky. Taste and adjust with more Dijon or cranberries as needed. Transfer to an airtight container and refrigerate up to 3 days for flavors to meld.
Plate
Toast 1 slice wholemeal sourdough per serving (or warm 1 wrap). Scoop roughly 130g smash onto each toasted bread. Serve with baby carrots, celery sticks, or sliced apple for extra fiber and crunch.
