Prep

Preheat oven to 200°C (400°F) and line a baking tray with parchment, brush lightly with olive oil. Core and coarsely grate the apple, squeeze dry in a clean tea towel. Finely grate the onion and garlic. Finely chop sage, parsley, and thyme. In a large bowl, combine turkey, apple, egg white, onion, herbs, garlic, onion powder, salt, pepper, and nutmeg. Mix gently with hands until just combined, avoid overworking.

Bake

Scoop and roll mixture into 12 evenly-sized meatballs (roughly 38g each) and space on the prepared tray. Bake at 200°C (400°F) for 18–20 minutes, rotating tray once halfway, until golden and internal temperature reaches 74°C (165°F). Cool fully on the tray.

Plate

Portion meatballs into 2 airtight containers of 6 meatballs each. Refrigerate up to 4 days or freeze up to 60 days. Serve warm with celery sticks, sliced apple, or yogurt dip on the side.
