Prep

Trim asparagus spears. Beat softened cream cheese with prepared horseradish, finely chopped chives, lemon zest, salt, and pepper until smooth and spreadable. Pat roast beef slices dry with kitchen paper.

Boil

Bring a small pan of water to a boil over high heat. Blanch asparagus 2 minutes until just tender-crisp, then plunge into iced water. Drain fully and pat dry on kitchen paper.

Wrap

Lay a roast beef slice flat on a clean board. Spread roughly 1 tablespoon horseradish cream cheese evenly over the slice. Place one blanched asparagus spear along one edge. Roll tightly from the asparagus edge to form a cylinder, seam-side down. Repeat with remaining 11 slices.

Plate

Portion 6 roll-ups into each of 2 flat airtight containers in a single layer. Refrigerate up to 2 days. Serve with baby carrots, celery sticks, or sliced bell pepper for extra fibre and crunch.
