Instructions
Prep
Combine 400g ground turkey, 28g panko, 1 egg white, 1 tbsp parsley, 2 grated garlic cloves, both paprikas, oregano, thyme, onion powder, cayenne, salt, and pepper in a bowl. Mix gently with hands until just combined. Roll into 12 evenly-sized meatballs (33g each) and arrange on a tray.
Crisp 1
Preheat air fryer to 200°C for 3 minutes. Arrange all 12 meatballs in a single layer with space between each. Spray lightly with olive oil and air-fry 11–13 minutes, shaking halfway, until golden and internal temperature reaches 74°C.
Crisp 2
Cool all meatballs fully on a rack.
Plate
Portion cooled meatballs into 2 airtight containers (6 meatballs each). Refrigerate up to 4 days or freeze up to 60 days. To serve, reheat at 180°C—3 minutes from fridge, 7–9 minutes from frozen—until heated through and crisp. Serve with bell pepper slices, celery sticks, or yogurt dip.
