Instructions
Prep
Cut 384g chicken breast into 12 bite-size cubes. Whisk together 72g Greek yogurt, 1.5 tbsp lemon juice, 2 grated garlic cloves, 0.5 tbsp grated ginger, 0.5 tbsp each garam masala, cumin, coriander, 0.25 tsp smoked paprika, 0.25 tsp turmeric, 0.25 tsp cayenne, 0.25 tsp cardamom, 0.5 tsp salt, 0.25 tsp pepper. Toss chicken thoroughly in marinade, cover, refrigerate minimum 30 minutes.
Roast
Preheat air fryer to 200°C (400°F) for 3 minutes. Arrange all 12 cubes in single layer with space between. Spray lightly with olive oil, air-fry 10–12 minutes, shaking basket halfway, until golden and internal temperature reaches 74°C (165°F). Cool on rack.
Roast 2
No second batch needed for this smaller portion size.
Finish
Toss all cooled chicken bites with 1.5 tbsp fresh chopped coriander. Portion into 2 airtight containers, 6 bites each. Refrigerate up to 4 days or freeze up to 60 days.
Plate
Serve chicken tikka bites with sliced cucumber, cherry tomatoes, or yogurt dip alongside. To reheat: air-fry at 180°C (350°F) — 3 minutes from fridge, 7–9 minutes from frozen — until heated through.
