Prep
Cut 384g chicken breast into 12 bite-size cubes. Combine cubes in a medium bowl with 1.5 tbsp olive oil, 1.5 tbsp lemon juice, lemon zest, 1.5 tbsp za'atar, 0.5 tbsp sumac, 2 grated garlic cloves, 0.25 tsp salt, and 0.25 tsp black pepper. Toss thoroughly until evenly coated. Rest 10 minutes.
Roast
Preheat air fryer to 200°C (400°F) for 3 minutes. Arrange all 12 chicken cubes in a single layer with space between each. Spray lightly with olive oil spray and air-fry 10–12 minutes, shaking basket halfway, until golden and internal temp reaches 74°C (165°F).
Finish
Transfer all 12 hot bites to a bowl. Drizzle with 1 tbsp finishing olive oil and toss with 1.5 tbsp fresh parsley. Cool fully on a rack. Portion into 2 airtight containers, 6 bites each.
Plate
Serve 6 bites per portion with cherry tomatoes, cucumber sticks, or yogurt dip. Store refrigerated up to 4 days or frozen up to 60 days. Reheat from fridge 3 minutes or from frozen 5–7 minutes at 180°C (350°F) until heated through.
