Cut 384g chicken breast into 12 bite-size cubes. In a medium bowl, combine chicken with 1 tbsp olive oil, 1.5 tbsp lime juice, lime zest, 2 grated garlic cloves, 2 tsp grated ginger, 2 tsp allspice, 2 tsp dried thyme, 0.5 tsp cayenne, 1/4 tsp smoked paprika, 1/4 tsp nutmeg, 1/4 tsp cinnamon, 1/2 tsp salt, 1/4 tsp pepper, and 1 sliced scallion. Toss thoroughly until coated. Rest 10 minutes to bloom spices.
Roast
Preheat air fryer to 200°C (400°F) for 3 minutes. Arrange all 12 cubes in a single layer with space between. Spray lightly with olive oil and air-fry 10–12 minutes, shaking basket halfway, until golden and 74°C (165°F) internal temperature.
Cool and plate
Let chicken rest on a rack until fully cooled. Portion into 2 airtight containers, 6 bites each. Refrigerate up to 4 days or freeze up to 60 days. To reheat, air-fry at 180°C (350°F)—3 minutes from fridge, 7–9 minutes from frozen—until heated through. Serve with sliced mango, cucumber sticks, or yogurt dip.
