Prep
Cut 384g chicken breast into 12 bite-size cubes. In a medium bowl, combine chicken with 1.5 tbsp olive oil, 1.5 tbsp grated ginger, zest of 1 lemon, 1.5 tbsp lemon juice, 2 tbsp chopped chives, 1 tbsp parsley, 0.25 tsp salt, and 0.125 tsp pepper. Toss thoroughly and rest 5 minutes.
Roast
Preheat air fryer to 200°C (400°F) for 3 minutes. Arrange all 12 cubes in a single layer with space between. Spray lightly with olive oil and air-fry 10–12 minutes, shaking basket halfway, until golden and internal temperature reaches 74°C (165°F).
Rest
Cool all chicken pieces fully on a rack, approximately 10 minutes.
Plate
Portion cooled chicken into 2 airtight containers or freezer bags of 6 bites each. Refrigerate up to 4 days or freeze up to 60 days. Serve with baby carrots, cucumber sticks, or yogurt dip.
