Cantonese deep-fried sesame balls, crisp golden shell coated densely with sesame seeds, hollow inside around a sweet red bean paste centre.

Prep
Dissolve 30g caster sugar in 80ml boiling water, stirring until clear. Cool 5 minutes to warm. Mix 100g glutinous rice flour with warm sugar water, stirring until soft dough forms. Knead 2 minutes until smooth, cover, rest 10 minutes. Divide dough into 4 balls; roll 60g red bean paste into 4 small balls.
Stuff
Flatten one dough ball in oiled palm to 7cm disc. Place bean paste ball in centre, gather dough around filling, pinch seam closed. Roll between palms into smooth crack-free ball. Repeat with remaining dough and filling. While dip is ready, pour sesame seeds into shallow dish, cold water into second dish.
Coat
Dip each stuffed ball briefly in cold water, then roll in sesame seeds, pressing gently so seeds stick densely on all sides. Handle carefully to prevent cracks.
Fry 1
Heat 500ml sunflower oil to 140°C in deep pan. Lower 2 balls gently into warm oil. Fry 8 to 10 minutes, rolling constantly against pan side with slotted spoon. Temperature can reach 160°C toward end. Lift out when deep golden and doubled in size.
Fry 2
Drain first batch on kitchen paper 30 seconds. Repeat frying process with remaining 2 balls until deep golden and expanded.
Plate
Arrange warm jian dui on plate, 2 per person. Serve immediately while sesame shell is crisp.
