Thinly slice 4 medium tomatoes and 2 medium onions into rings. Thinly slice 6 garlic cloves. Roughly chop 30g flat-leaf parsley. Measure 1/2 cup olive oil, 1/2 cup white wine, 4 tbsp lemon juice, 2 tsp oregano, 1.5 tsp salt, and 0.5 tsp pepper.

Preheat oven to 190°C. Arrange onion rings in a single layer in a medium ovenproof dish. Scatter garlic over onions, then layer tomato slices on top. Drizzle 1/4 cup olive oil over vegetables and season with half the salt and pepper. Bake 15 minutes until softened and beginning to colour.
Bake 2
Place fish fillets skin-side up on top of vegetables. Pour white wine and lemon juice over the fish, drizzle with remaining 1/4 cup olive oil, and sprinkle with oregano and remaining salt and pepper. Bake 18 to 20 minutes until fish is opaque and flakes easily when pressed.
Plate
Scatter parsley over the fish and serve directly from the dish with crusty bread alongside.
