Instructions

Prep

Dice onion (1/2 + 1/2), mince garlic (4 + 2 cloves), chop jalapenos removing seeds, chop tomatoes, dice potatoes and carrots into 1cm cubes, measure peas, spices, stocks, slice avocado, drain pickled jalapenos, chop cilantro, cut lime wedges.

Saute 1

Heat 2 tbsp oil in saucepan over medium for 1 minute. Add 1/2 onion and rice, cook 2 minutes until softened. Add 4 garlic cloves and tomato paste, cook 30 seconds until fragrant. Toast rice 2 minutes until translucent at edges.

Simmer 1

Add chicken stock and 0.75 tsp salt, bring to boil over medium-high. Reduce to low, cover, cook 14 minutes until liquid absorbs and rice is tender. Rest covered off heat while you finish picadillo.

Build 1

Heat 2 tbsp oil in skillet over medium-high for 1 minute. Add remaining 1/2 onion and 1 jalapeno, cook 3 minutes until softened. Add ground beef, break up with wooden spoon, cook 5–6 minutes until deeply browned with no pink showing.

Bloom

Add remaining 2 garlic cloves, cook 30 seconds until fragrant. Add tomatoes, cumin, oregano, cinnamon, cloves, remaining 0.75 tsp salt, and pepper. Cook 3 minutes over medium-high until tomatoes collapse and spices bloom.

Simmer 2

Add diced potatoes and carrots, pour in beef stock. Reduce to medium-low, cover, simmer 12–13 minutes until potatoes are tender when pierced. Uncover, add peas, cook 3 minutes over medium until heated through and sauce reduces to glossy gravy.

Char and plate

Char tortillas over flame 20 seconds per side. Fluff rice, spoon into bowls. Ladle picadillo over rice. Top with avocado, pickled jalapeno, cilantro. Serve with charred tortillas and lime wedges.
