Prep
Heat oven to 200C/400F. Mix the flour, yeast, salt, water, and oil into a dough and rest covered 15 minutes.
Build
Divide dough in half. Roll each half into a rectangle. Layer the salami, ham, and provolone on each, scatter with oregano, then roll up tightly and seal.
Bake
Set seam-down on a tray and slash the tops. Bake over medium heat at 200C/400F for 20–22 minutes until deep golden and crisp.
Crisp
Brush with oil and return over high heat 3 minutes until the crusts are glossy and the bases sound hollow.
Plate
Rest the stromboli 5 minutes, then slice into thick rounds. Serve with warm marinara for dipping.
