Homemade Peanut Butter Cups
American candy classic, dark chocolate shells filled with sweetened peanut butter and set firm in the fridge.

Prep
Line 4 wells of a mini muffin tin with paper cases. Beat peanut butter, icing sugar, softened butter, and fine salt in a small bowl until smooth and thick. Divide into 4 small flattened discs slightly smaller than the muffin wells.
Melt
Place dark chocolate in a heatproof bowl over barely simmering water, stirring 3–4 minutes until smooth and glossy. Remove from heat.
Build 1
Spoon 1 tsp melted chocolate into each paper case. Tilt the tin so chocolate coats the bottom and slightly up the sides. Refrigerate 10 minutes until set firm.
Build 2
Place one peanut butter disc in each chocolate case. Spoon remaining melted chocolate over the peanut butter, covering completely and tapping gently to level. Sprinkle with flaky sea salt.
Chill and plate
Refrigerate at least 30 minutes until fully set. Serve cold, 2 cups per person on a plate.
