Heat oven to 425F (220C) with two 20cm cast iron skillets inside. Tear oyster mushrooms into pieces, halve shiitake, quarter cremini. Finely chop shallots and mince garlic. Pick thyme leaves and grate gruyere. Whisk 4 eggs for 30 seconds until frothy, then whisk in flour, milk, nutmeg, and 0.5 tsp salt into a smooth batter. Rest 5 minutes. Halve lemons.
Saute
Heat 4 tbsp olive oil divided between two heavy skillets over medium-high for 2 minutes. Divide mushrooms evenly between skillets, lay in a single layer with 0.5 tsp salt total, cook undisturbed 6 minutes until edges turn deep mahogany.
