Prep
Finely dice onion, celery, and carrot. Mince garlic and chop tarragon. Chop lobster meat and reserve shells. Measure cognac, fish stock, and cream.

Heat olive oil in a large saucepan over medium-high heat. Add reserved lobster shells and press firmly for 3–4 minutes until deep red and fragrant. Shells should release their aroma.

Remove shells with a slotted spoon and discard. Blend soup with a hand blender until completely smooth. Pass through a fine sieve, pressing firmly to extract all liquid. Stir in cream and tarragon; simmer 5 minutes until slightly thickened. Season with salt and white pepper.
Plate
Divide chopped lobster meat between two warm bowls. Ladle bisque over the meat. Garnish with fresh chives and serve with crusty bread.
