New York Deli Pastrami Sandwich

Prep
Gather 360g sliced pastrami, 4 rye bread slices, 80g Swiss cheese, 2 tbsp yellow mustard, 8 dill pickle slices, and 30g softened butter. Have all ingredients ready by the stovetop.
Sear
Heat a dry skillet over medium heat. Add pastrami slices in a single layer, warm 2–3 minutes turning once, until heated through and edges just begin to crisp. Transfer to a plate.
Toast
Spread softened butter on one side of each bread slice. Place all 4 slices butter-side down in the pan over medium-low heat (work in batches if needed). Lay Swiss cheese on top of each slice, cover with a lid, cook 90 seconds until cheese melts and bread is golden. Transfer to a plate.
Build
Spread yellow mustard on the inside of two toasted bread slices. Pile the warmed pastrami generously onto the mustard side of each. Top each with 4 dill pickle slices.
Plate
Close both sandwiches, slice diagonally, and serve immediately while the bread is still warm and crisp.
