New England Cod Chowder
A New England seafood classic, thick chunks of cod simmered in a creamy potato and sweetcorn chowder with smoky bacon and fresh chives.

Prep
Cut cod into 4cm chunks. Chop bacon finely. Peel potatoes and cut into 1.5cm cubes. Dice onion and celery finely. Mince garlic. Defrost sweetcorn. Measure stock, cream, flour, salt, pepper, and chives.
Saute
Cook bacon in a medium saucepan over medium heat 4β5 minutes until crispy, then remove and set aside. Add butter to bacon fat, then onion and celery; cook 4β5 minutes until softened. Add garlic and cook 30 seconds until fragrant.
Build
Stir in flour and cook 1 minute, stirring constantly. Gradually pour in stock, whisking out lumps. Bring to gentle simmer over medium heat.
Simmer
Add potato cubes and cook 10β12 minutes until just tender when pierced. Add sweetcorn and double cream, stir to combine.
Simmer 2
Gently lower cod chunks into simmering chowder over medium heat. Cook 4β5 minutes until cod is opaque and flakes easily. Season with salt and white pepper to taste.
Plate
Ladle chowder into deep bowls. Top with crispy bacon and fresh chives. Serve immediately.
