Instructions

Prep

Mix the flour, baking powder, salt, and warm water into a soft dough and rest 10 minutes. Chop the onion, lettuce, and tomatoes.

Sear

Brown the ground beef and onion in a medium skillet over medium-high heat for 6–7 minutes, then stir in the cumin, chilli powder, and pinto beans and cook for 3 minutes until thick.

Fry

Divide the dough in half. Stretch each piece into a round and fry in hot oil over medium-high heat, 2 minutes per side, until puffed and golden. Work in batches if needed.

Build

Set each fry bread on a plate and pile the spiced beef and beans over the top while everything is hot.

Plate

Scatter cheddar, lettuce, and tomato over each open-faced taco so the cheese melts slightly, then serve hot.
