Prep
Soak six wooden skewers in cold water 10 minutes. Toss 200g chicken thigh cubes with yogurt, 1 minced garlic clove, paprika, allspice, Aleppo pepper, salt; rest 10 minutes. Knead 180g lamb mince with grated yellow onion, half the parsley, seven-spice, salt 60 seconds until sticky. Toss 180g beef cubes with olive oil, cumin, coriander, black pepper, salt. Mix remaining parsley, red onion, lemon juice, sumac in a bowl.
Grill 1
Heat grill pan over medium-high 4 minutes until radiant heat rises. Brush tomato halves with oil and salt, grill cut-side down 4 minutes until charred and softened. Transfer to a plate.
Grill 2
Thread chicken onto two skewers, shape lamb mince around two skewers into 12cm sausages, thread beef onto the remaining two. Grill chicken 10 to 12 minutes, turning every 2 to 3 minutes, until deeply charred and cooked through.
Grill 3
While chicken cooks, grill kafta 8 to 10 minutes and beef 6 to 8 minutes, both turning every 2 to 3 minutes, until deeply charred and cooked through. Rest all meats 3 minutes off heat.
Warm
Warm pitas on the cooler grill edge 30 seconds per side until pliable and lightly marked.
Plate
Lay one warm pita on each of two large plates, slide three skewers off onto each bread, set charred tomato alongside, fan parsley-onion salad and toum to one side, finish each with a lemon wedge.
