Prep

Divide each portion of beef into two thin patties. Fold the cheese into squares, seal between the patties, and crimp the edges shut. You will have 2 stuffed patties total.

Cook the stuffed patties in oil over medium heat 4 minutes a side until browned and the cheese melts molten inside. Work in batches if your pan is crowded, or use a larger skillet to fit both patties.

Butter the buns and toast cut-side down over medium heat 1 minute until golden. Thinly slice the onion.
