Maple Glazed Chicken Skillet

Prep
Peel and cut sweet potatoes into 2cm cubes. Mince garlic finely. Season chicken thighs with salt and pepper. Mix maple syrup, tamari, and water in a small bowl.
Roast
Toss sweet potato cubes with 1 tbsp oil, smoked paprika, and a pinch of salt on a large baking tray. Place in a 200°C oven for 22–25 minutes, turning halfway, until golden and tender.
Sear
Heat 1 tbsp oil in a large oven-safe skillet over medium-high heat. Place chicken thighs smooth-side down (work in batches if needed to avoid crowding), sear 5–6 minutes without moving until deep golden. Flip and cook 3–4 minutes until the underside is golden.
Glaze
Add minced garlic and thyme to the pan, cook 30 seconds until fragrant. Pour the maple-tamari mixture over chicken. Simmer 3–4 minutes, spooning glaze continuously, until sauce reduces and chicken reaches 75°C internal temperature.
Plate
Divide roasted sweet potato between two serving plates. Top each with two glazed chicken thighs and spoon all pan juices over. Serve immediately.
