Prep
Dissolve 8g active dry yeast and 2 tsp sugar in 360ml lukewarm water, rest 5 minutes until foamy. Add 240g plain flour and 0.5 tsp sea salt, beat with a wooden spoon until smooth, sticky batter forms. Cover bowl with clean cloth.
Rest
Let batter rest at room temperature 20 minutes until slightly risen and bubbly. While batter rises, roughly crush 60g walnuts and measure out 6 tbsp thyme honey, 1 tsp ground cinnamon, and 2 tsp sesame seeds.
Fry
Heat 1000ml sunflower oil in a deep pan to 180°C. Using two wet teaspoons, scoop small rounds of batter and drop carefully into hot oil in batches of 6–8. Fry 2–3 minutes, turning occasionally, until puffed, golden, and crisp all over. Remove with a slotted spoon and drain on kitchen paper. You may need to fry in 2–3 batches.
Crisp and plate
Pile hot loukoumades onto a plate and drizzle generously with thyme honey. Scatter crushed walnuts and sesame seeds over the top, finish with a dusting of ground cinnamon, and serve immediately while hot and crisp.
