Greek Spiced Pork Sausage with Peppers β Loukaniko with Peppers
Spiced pork and orange loukaniko sausages pan-fried with sweet peppers, onions, and red wine, a rustic Greek taverna dish.

Prep
Cut 400g loukaniko sausages into 2cm rounds. Deseed and slice 2 large red peppers and 1 medium green pepper into strips. Thinly slice 2 medium onions and 3 garlic cloves. Measure 100ml red wine, 200g crushed tomatoes, oregano, paprika, chilli flakes, salt, pepper, and chop 10g parsley.
Sear
Heat 2 tbsp olive oil in a wide pan over medium-high heat. Add sausage rounds, fry 4β5 minutes turning occasionally until browned on all sides. Remove and set aside.
Saute
Reduce heat to medium, add sliced onion, cook 5β6 minutes until softened and beginning to colour. Add garlic, cook 1 minute until fragrant. Add peppers, cook 4β5 minutes until softened.
Build
Pour in red wine, simmer 2 minutes until reduced by half. Add crushed tomatoes, oregano, paprika, chilli flakes, salt, and pepper; stir to combine.
Simmer
Return sausages to the pan, cover, and simmer on low heat 12β15 minutes until sauce thickens and sausages are cooked through, stirring occasionally.
Plate
Scatter chopped parsley over the loukaniko and peppers, then transfer to a serving dish and serve with crusty bread alongside.
