Instructions

Prep

Slice yellow onion thinly. Julienne fresh ginger and divide into two portions. Chop fresh coriander and green chillies. Soak saffron threads in 2 tbsp warm milk. Measure all spices: kashmiri chilli powder, ground coriander, fennel, ginger, cumin, turmeric, garam masala. Have ginger-garlic paste ready.

Heat 2 tbsp ghee and 2 tbsp oil in a heavy pot over medium-high heat. Add bay leaves, cinnamon sticks, cardamom pods, and cloves; sizzle 30 seconds until fragrant. Add lamb shanks and sear 6 minutes, turning frequently, until deeply browned on all sides. Remove and set aside.

Saute

Lower heat to medium. Add sliced onion to the pan and cook 7 minutes, stirring often, until deep golden brown. Add ginger-garlic paste, cook 1 minute until raw smell fades. Add all ground spices, salt, and 3 tbsp water; stir 30 seconds to bloom.

Simmer 1

Return lamb shanks with juices. Add 1 cup hot water, stir, cover, reduce heat to low. Simmer 35 minutes, turning lamb once halfway, until fork-tender and falling from bone. While lamb cooks, dry-toast 3 tbsp atta flour in a small skillet over medium-low heat 3 minutes, stirring constantly, until light golden and nutty.

Simmer 2

Mix toasted atta with 1/4 cup cold water to form a smooth slurry. Uncover lamb, slowly stir slurry into simmering broth while stirring constantly. Cook 4 minutes over medium-low heat until gravy thickens to glossy stew consistency.

Finish

Stir in remaining 2 tbsp ghee, saffron milk, half the julienned ginger, and 1 tsp garam masala. Cover and rest 3 minutes off heat.

Plate

Transfer lamb shanks to deep bowls, spoon gravy over. Garnish with remaining julienned ginger, fresh coriander, and green chillies. Serve with lemon wedges, naan, and pickle alongside.
