Slice eggplant into 1.5cm thick rounds and salt both sides with 0.75 tsp salt. Rest on paper towels 10 minutes, then pat dry. Dice one onion for the sauce. Mince garlic. Dice tomatoes. Whisk flaxseed with 120ml warm water in a small bowl and rest 5 minutes until thickened. Grate the remaining two onions for the sopa. Pick parsley leaves. Preheat oven to 400F.

Brush eggplant rounds with 1/4 cup olive oil. Heat a large cast iron skillet over high heat 3 minutes until smoking. Working in batches if needed, char eggplant 3 minutes per side until edges blacken and flesh collapses. Lift to a plate.
