Instructions

1

Prep

Remove crusts from 4 bread slices. Whisk 4 beaten eggs with 1/4 cup milk until smooth. Dip all bread slices fully in egg mixture, turning to coat all sides, soaking 30 seconds each side.

2

Fry

Heat 40g butter and 2 tbsp oil in a large non-stick pan (or two standard pans) over medium heat until butter foams. Add bread slices, cook 2–3 minutes per side until deep golden and crisp, pressing gently with a spatula for even contact. Work in batches if needed to avoid overcrowding.

3

Finish and plate

Transfer to plates, immediately top each serving with 10g butter, drizzle generously with 2 tbsp condensed milk per person, add 1 tsp golden syrup per person if using. Serve immediately while hot and crisp.
