Prep
Finely hand-cut 300g sushi-grade ahi tuna into 0.5cm cubes. Dice 160g avocado and 80g cucumber finely. Slice 2 spring onions. Whisk dressing: 1.5 tbsp tamari, 1 tsp sesame oil, 1 tbsp lime juice, 0.5 tsp lime zest, 0.5 tsp grated ginger, 0.5 tsp honey until combined.
Fry
Heat 200ml vegetable oil in a small saucepan to 180°C over medium-high heat. Fry 6 wonton triangles in batches 60–90 seconds until golden and crisp. Drain on kitchen paper, season with salt, set aside.
Build
Place diced tuna in a bowl, pour dressing over, toss gently to coat. Fold in cucumber and spring onions, combine carefully without breaking tuna.
Plate
Spread diced avocado as a base on two plates. Spoon dressed tuna tartare over avocado. Scatter sesame seeds on top. Serve immediately with wonton chips alongside for scooping.
