Red Bean Pancake Sandwich — Dorayaki
Japan's most beloved wagashi, two fluffy honey castella pancakes sandwiched around a generous filling of sweet azuki red bean paste.

Prep
Whisk 1 egg, 40g sugar, 1 tbsp honey, and 0.5 tbsp mirin until pale and thickened. Sift 60g flour, 0.5 tsp baking powder, and 0.125 tsp bicarbonate of soda into the mixture. Fold until combined, add 30ml water, stir until smooth. Rest batter 10 minutes.
Fry
Heat a non-stick pan over medium-low heat, wipe with a thin film of oil. Pour 2 tbsp batter to form a 9cm circle. Cook undisturbed 1.5–2 minutes until bubbles cover the surface and edges set. Flip, cook 45 seconds until pale golden.
Fry 2
Repeat with remaining batter to make 4 pancakes total, cooling each on a rack as you go. Pancakes should be lightly coloured, not dark.
Wrap
Spread 60g red bean paste evenly over the flat side of 2 pancakes. Press a second pancake flat-side down on top of each, pressing gently to adhere.
Rest and plate
Wrap assembled dorayaki in cling film and rest 5 minutes. Unwrap and arrange on a plate to serve.
