Prep
Mix the mayonnaise, ketchup, and relish into a Russian dressing. Squeeze the sauerkraut dry and butter all 4 rye slices on one side.
Build
Spread dressing on the unbuttered sides of each slice. Layer corned beef, Swiss, and sauerkraut on 2 slices, then close with the remaining 2 slices, buttered sides facing out. You will have 2 sandwiches.
Fry
Griddle both sandwiches over medium heat, 3 minutes a side, pressing gently, until the rye is crisp and the cheese melts. Work in one batch if your griddle fits both comfortably; if not, cook one at a time and keep the first warm.
Plate
Rest 1 minute, then slice each Reuben in half on the diagonal and serve hot with extra dressing.
