Prep

Mince 3 garlic cloves and 1 additional garlic clove for tzatziki. Mix 150g Greek yoghurt with minced garlic, 2 tbsp lemon juice, 1 tsp oregano, ½ tsp thyme, ½ tsp smoked paprika, salt, and pepper. Add 500g chicken thigh chunks, toss to coat, cover, refrigerate 1 hour minimum. Grate cucumber, squeeze dry. Combine 200g Greek yoghurt, cucumber, minced garlic, 1 tbsp lemon juice, 1 tbsp fresh dill, salt; set aside.

Grill

Thread marinated chicken onto skewers. Heat a griddle pan or grill to high. Cook skewers 5 to 6 minutes per side until deeply charred and cooked through, turning once. Internal temperature should reach 75°C.

Plate

Transfer skewers to a serving plate. Serve with tzatziki, lemon wedges, and fresh oregano scattered over.
