Creamy Tomato Curry Chicken Bowl β Chicken Handi Bowl
A weeknight bowl of Punjabi clay-pot style chicken in a deeply caramelised tomato-onion gravy with cream and bell pepper, spooned over basmati rice.

Prep
Rinse 140g basmati rice. Finely chop 1 medium onion. Mix ginger-garlic paste, 2 green chillies finely chopped. Puree 2 medium tomatoes. Cut green and red bell peppers into 0.5-inch squares. Crush 2 tsp kasuri methi. Cut 400g chicken thigh into 1-inch pieces. Chop fresh coriander and julienne fresh ginger for garnish.
Boil
Combine rice, 260ml water, and 0.5 tsp salt in a saucepan. Bring to boil over high heat, cover, reduce to low, cook 10 minutes. Remove from heat, rest covered 5 minutes until fluffy.
Saute
Heat 3 tbsp oil and 1 tbsp ghee in a heavy skillet over medium heat. Add chopped onion, cook 7 minutes stirring until deep golden brown. Add ginger-garlic paste and green chillies, cook 1 minute until raw smell fades.
Build
Stir in tomato puree, tomato paste, kashmiri chilli powder, ground coriander, ground cumin, turmeric, and 0.5 tsp salt. Cook 5 minutes on medium-low, stirring, until oil beads at edges and masala turns deep red.
Sear
Add 400g chicken pieces to the skillet, sear 3 minutes on medium-high stirring until edges turn opaque. Pour in 200ml hot water, stir, cover, reduce to low, cook 8 minutes until chicken reaches 165Β°F internal temperature.
Simmer
Uncover, add diced bell peppers, cook 90 seconds on medium until peppers soften slightly but stay crisp. Reduce heat to low, stir in 1/4 cup heavy cream, simmer 90 seconds until gravy is glossy and clings to chicken. Stir in garam masala and crushed kasuri methi off heat.
Plate
Fluff rice with a fork. Spoon rice into bowls, top with chicken handi, garnish with fresh coriander and julienned ginger. Serve with mango pickle and roasted papad alongside.
