Baked Cheese Triangles with Herbs β Cheese Fatayer
Levantine triangular cheese pies with akkawi and feta wrapped in soft yeasted dough, baked golden, served with a fresh herb salad and za'atar olive oil.

Prep
Soak akkawi cheese 1 hour, drain, crumble finely. Combine akkawi, feta, mint, parsley, scallions, Aleppo pepper, cumin, salt in a bowl. Dice tomato, cucumber, red onion; chop parsley. Whisk zaatar with olive oil. Beat eggs with water for wash.
Bake 1
Heat oven to 220C. Flour work surface, divide dough into 8 portions, roll each into 14cm round about 4mm thick. Place a quarter filling in centre leaving 2cm border. Fold three edges up to centre, pinch seams firmly to seal into triangle.
Bake 2
Place fatayer seam-up on parchment-lined tray. Brush tops with egg wash, scatter sesame seeds. Bake 14 to 16 minutes at 220C until dough is deeply golden and crisp underneath when lifted.
Build
While fatayer bakes, toss tomato, cucumber, red onion, parsley, olive oil, lemon juice, sumac, salt in a small bowl. Mix gently until just combined.
Plate
Lift fatayer to plate, drizzle zaatar oil across the tops, fan herb salad alongside, and serve with lemon wedge.
