American Corned Beef Hash
A classic American diner staple, crispy corned beef and golden potato hash with caramelised onions, topped with two fried eggs and hot sauce.

Prep
Peel and cut potatoes into 1.5cm cubes. Finely dice onion and bell pepper. Mince garlic. Crumble corned beef. Measure out smoked paprika, garlic powder, salt, and pepper.
Saute
Heat 2 tbsp vegetable oil in a large cast iron skillet over medium-high heat. Add potato cubes, cook 10β12 minutes turning occasionally until golden and crispy outside, tender inside.

Add onion and bell pepper, cook 4β5 minutes until softened. Add garlic, cook 30 seconds until fragrant. Stir in corned beef, smoked paprika, garlic powder, salt, and pepper to combine.
Crisp 1
Press hash down firmly into an even layer with spatula. Cook without moving 4β5 minutes until deep golden crust forms on base.
Crisp 2
Flip sections of hash and press down again. Cook 3β4 minutes further until second side is crispy.
Fry
Push hash to pan edges, crack all 4 eggs into centre. Cook 3β4 minutes over medium heat until egg whites set fully and yolks remain runny.
Plate
Serve hash directly from the pan with hot sauce on the side.
