American Beef Meatloaf
An American diner comfort classic, a glazed beef and pork meatloaf with a sticky ketchup and brown sugar crust.

Prep
Peel and quarter 500g potatoes. Finely grate 50g onion and mince 1 garlic clove. Combine 350g beef mince, 100g pork mince, 30g panko, 1 beaten egg, onion, garlic, 1 tbsp Worcestershire, 0.5 tsp smoked paprika, 0.5 tsp thyme, 0.5 tsp salt, 0.25 tsp black pepper in a bowl; mix gently with hands until just combined.
Bake 1
Preheat oven to 180°C. Shape meatloaf mixture into a 18cm × 9cm loaf on a small oiled tray. Mix glaze: 2 tbsp ketchup, 0.5 tbsp brown sugar, 0.5 tbsp Worcestershire, 0.25 tsp Dijon mustard. Spread half the glaze over meatloaf and bake 25 minutes at 180°C until edges begin to caramelize.
Bake 2
Spread remaining glaze over meatloaf and bake 20–25 minutes more at 180°C until internal temperature reaches 72°C and glaze is deep and sticky. While meatloaf bakes, boil potatoes in salted water 15–18 minutes until completely tender.
Roast
While meatloaf rests 10 minutes, toss 200g trimmed green beans with 1.5 tsp olive oil, 0.25 tsp salt, pinch of black pepper. Roast at 200°C for 10–12 minutes until tender with light char.
Finish
Drain potatoes and mash with 40g butter, 50ml warm milk, 0.5 tsp salt, pinch of white pepper until smooth and creamy.
Rest and plate
Slice rested meatloaf and arrange on plates with creamy mashed potato and roasted green beans alongside. Serve immediately.
