Instructions
1
Preheat the oven to 175°C (350°F) and line a 10x10cm tin with baking paper, leaving an overhang on two sides.
2
Place the chopped dates in a small bowl and pour 2 tablespoons of just-boiled water over them; let sit for 5 minutes to soften, then mash lightly with a fork.
3
In a mixing bowl, whisk the melted butter and brown sugar together until glossy, then beat in the egg.
4
Stir in the softened dates along with any residual soaking liquid.
5
Sift in the flour, baking powder, ground cardamom and salt, folding gently until just combined and no dry streaks remain.
6
Fold in the toasted chopped walnuts, reserving a small handful for topping.
7
Pour the batter into the prepared tin, smooth the top, and scatter the reserved walnuts over the surface.
8
Bake for 20-22 minutes, until the edges pull slightly from the sides and a skewer inserted in the centre comes out with a few moist crumbs.
9
Set the tin on a wire rack and let cool for 10 minutes before lifting out using the paper overhang.
10
Drizzle the warmed honey over the top, slice into squares once fully cooled, and serve.
