Vietnamese Black Sesame Tart
Vietnamese · Dessert

Vietnamese Black Sesame Tart

A Vietnamese-style dessert tart built on a short, buttery pastry shell and filled with a fragrant black sesame custard enriched with coconut milk and condensed milk. The ground toasted sesame gives the filling a deep nutty, almost smoky sweetness that sets this apart from standard egg tarts, finished with a scatter of whole toasted seeds for crunch.

Instructions

1
Rub cold cubed butter into sieved flour and salt until the mixture resembles coarse breadcrumbs.
2
Stir in sugar, then bind with the beaten egg yolk into a smooth dough; wrap and chill for 20 minutes.
3
Roll the chilled dough thin and line two 8cm tart tins, pressing into the base and sides; prick the bases with a fork and chill again for 10 minutes.
4
Blind bake the tart shells at 180C for 10 minutes until lightly set, then remove any weights.
5
Toast the black sesame seeds in a dry pan until fragrant, then grind to a coarse paste using a mortar or spice grinder.
6
Whisk together the ground sesame paste, coconut milk, beaten egg and condensed milk until smooth.
7
Pour the sesame custard into the part-baked tart shells and return to the oven at 160C for 15-18 minutes until just set with a slight wobble in the centre.
8
Cool the tarts completely on a wire rack, then scatter the toasted whole sesame seeds over the tops before serving.
