Instructions
1
Prep
Rinse the red lentils under cold water in a fine sieve until water runs clear. Finely chop the onion, carrot, red bell pepper, and parsley.
2
Sauté
Heat the olive oil in a small saucepan over medium heat and sauté the onion, carrot and bell pepper for 5 minutes until the onion turns translucent.
3
Bloom
Stir the tomato paste, cumin and pul biber into the pan; cook over medium heat for 1 minute until the raw spice smell fades.
4
Simmer
Add the rinsed lentils and vegetable stock, bring to a boil over high heat, then reduce to low and simmer uncovered for 18 minutes until the lentils fall apart and thicken.
5
Finish
Stir in the lemon juice and season with salt to taste, tasting and adjusting until bright rather than flat.
6
Glaze
Warm the olive oil in a small pan over low heat, stir in the smoked paprika for 20 seconds until toasted, then remove from heat immediately.
7
Plate
Ladle the soup into a bowl, drizzle the paprika oil over the top and scatter with chopped parsley.
