Instructions
1
Prep
Peel and grate the daikon radish, then rehydrate the shiitake mushrooms in warm water until soft, dice finely, and thinly slice the scallion.
2
Simmer the grated daikon in vegetable stock over medium heat for 8 minutes until translucent and softened, then stir in the mushroom and scallion.
3
Build
Whisk rice flour and cornstarch with water until smooth, fold into the radish mixture with white pepper, sugar, and salt over low heat 2 minutes until thickened.
4
Steam
Pour batter into a greased loaf dish and steam over high heat for 25 minutes until set and a skewer inserted comes out clean.
5
Chill
Cool the steamed cake at room temperature 20 minutes, then refrigerate uncovered 2 hours until firm enough to slice.
6
Fry
Cut the chilled cake into 1cm slices and pan-fry in vegetable oil over medium heat for 3 to 4 minutes per side until deep golden and crisp.
7
Drizzle sesame oil over the fried slices and toss gently off the heat for 30 seconds until they glisten, then whisk soy sauce and chili oil together.
8
Plate
Arrange the crisped turnip cake slices on a plate with the soy-chili dipping sauce alongside.
