Instructions
1
Prep
Rinse the tripe and beef shank under cold water, trim excess fat from both, and cut tripe into 1-inch pieces.
2
Simmer
Place tripe and shank in a pot with water, stock, and bay leaf over high heat. Bring to boil, then reduce to low and simmer covered for 2 hours until tripe is tender.
3
Toast
While meat simmers, toast guajillo and ancho chiles in a dry skillet over medium heat for 1 minute per side until fragrant and darkened.
4
Blitz
Soak toasted chiles in hot water for 15 minutes until softened. Drain, blend with garlic, onion quarter, cumin, oregano, and 1/4 cup broth into a smooth paste.
5
Simmer
Strain chile paste into the pot, stir in salt, and simmer uncovered over medium-low heat for 20 minutes until broth deepens in color.
6
Add
Stir in hominy, black beans, and pork skin, then simmer for 15 minutes over medium-low heat until heated through.
7
Thicken
Whisk masa harina mixed with water into the pot and simmer over low heat for 5 minutes, stirring occasionally, until broth thickens lightly.
8
Plate
Ladle soup into a bowl, top with diced onion, cilantro, and chili powder, and serve with lime wedges.
