Fried Puffed Bread
Bhatura is a deep-fried Indian flatbread made from a yeasted, yoghurt-leavened dough that puffs into a golden, blistered dome when it hits hot oil. Crisp outside and pillowy inside, it is torn and eaten alongside spiced chickpea curry, pickle or a simple potato dish.

Instructions
1
Prep
Whisk flour, semolina, baking powder, baking soda, salt and sugar until evenly combined with no white soda streaks remaining.
2
Knead
Add yogurt, 1 tbsp oil and ajwain seeds, then work in water a splash at a time until dough is smooth and slightly tacky.
3
Rest
Cover with a damp cloth and leave at warm room temperature for 3 to 4 hours until visibly softened and slackened.
4
Build
Divide into one ball, roll on floured counter into a 5-inch oval about 1/8 inch thick with slightly thicker edges.
5
Fry
Heat 240ml oil over medium-high until a dough scrap floats and sizzles in 3 seconds, then slide bread in and press gently.
6
Fry
Cook about 45 seconds until puffed into a dome, flip and fry the second side 45 seconds until golden brown patches appear.
7
Drain
Lift out with a slotted spoon and rest briefly on paper towel to pull off surface oil while still puffed.
8
Plate
Transfer to a plate while hot and serve immediately with chickpea curry or pickle before it deflates.
