Crispy Fried Tilapia

Whole tilapia fillets are dredged in a seasoned rice flour and cornstarch coating and deep-fried until the crust turns golden and shatters on contact, served with a Thai-style sauce of fish sauce, lime, garlic, and fresh chili. Crushed peanuts and cilantro finish the plate alongside jasmine rice.
