Crispy Battered Cod Fillet
Cod fillet coated in a seasoned cornmeal-flour batter, fried until the crust turns golden and craggy while the flesh stays flaky. Lime, chili powder and cumin bring Mexican character, and the fillet is served with a wedge of lime and a smear of chipotle crema for a squeeze-and-dip finish.

Instructions
1
Prep
Pat the cod fillet dry and season lightly with salt; let rest 10 minutes at room temperature so the batter adheres cleanly.
2
Whisk
Combine masa harina, all-purpose flour, baking powder, chili powder, cumin and remaining salt. Whisk in cold water until smooth.
3
Heat
Pour vegetable oil into a small deep saucepan and heat over medium-high to 350°F (175°C), about 5 minutes, until a pinch of batter sizzles and floats immediately.
4
Fry
Dip the cod fillet into the batter to coat fully, lower it into the hot oil, and fry 4 to 5 minutes, turning once, until the crust is deep golden and the fish flakes easily.
5
Drain
Lift the fillet out with a slotted spoon onto a paper-towel-lined plate and let rest 1 minute so excess oil drains off.
6
Build
Stir the sour cream and chipotle-in-adobo together in a small bowl until evenly streaked.
7
Plate
Place the fried cod fillet on a plate, spoon the chipotle crema alongside, scatter cilantro over the top, and set the lime wedge on the side.
