Sweet Simmered Beef Rice Bowl
Thin-sliced beef sirloin simmered in a soy, mirin and sugar broth until glossy and tender, spooned over steamed white rice with the sweet-savory sauce soaking through. Sliced onion cooks alongside the beef, and the bowl finishes with scallion and a soft-cooked egg for richness.

Instructions
1
Prep
Slice the beef sirloin across the grain into thin sheets and slice the onion into thin half-moons.
2
Simmer
Combine dashi, soy sauce, mirin, sugar and sake in a small saucepan over medium heat for 2 minutes until sugar dissolves and liquid turns glossy.
3
Simmer
Add onion and simmer over medium-low heat for 3 minutes until softened and translucent at the edges.
4
Simmer
Lay beef slices into simmering liquid in a single layer over medium-low heat for 3 to 4 minutes, stirring gently, until beef loses pink color and sauce clings thickly.
5
Poach
Crack egg into separate small pan of barely simmering water over low heat for 2 to 3 minutes until white sets but yolk jiggles softly.
6
Plate
Spoon hot rice into a deep bowl, ladle beef, onion and sauce over the top, crown with poached egg, scatter scallion and pickled ginger, serve immediately.
