Instructions
1
Prep
Rinse the azuki beans under cold water, soak in 1 cup water for 10 minutes until slightly plumped, then drain.
2
Boil
Drain the beans and transfer to a small saucepan with 1.5 cups fresh water; bring to a boil over high heat, skimming foam for 1 minute.
3
Simmer
Reduce heat to low, cover partially, and simmer 40 minutes, topping up water as needed, until beans mash easily against the pan.
4
Reduce
Stir in sugar and salt, then simmer uncovered over medium-low heat 5 minutes, mashing roughly half the beans, until the soup thickens to a loose porridge.
5
Finish
Remove from heat and stir in coconut cream until the soup turns pale, even brown with no white streaks.
6
Knead
In a small bowl, work the glutinous rice flour with 2 tbsp water using your fingers until it forms a smooth, non-cracking dough, then roll into 4 small balls.
7
Poach
Drop the rice dumplings into simmering water over medium heat and cook for 3 minutes until they float and turn slightly translucent.
8
Plate
Ladle the warm bean soup into a small bowl, add the poached rice dumplings, and serve immediately while hot.
