Grilled Salmon Sandwich

Gochujang-glazed salmon fillet seared in a skillet and tucked into a toasted brioche bun with quick-pickled cucumber, shredded napa cabbage tossed in sesame-rice vinegar dressing, scallion and gochujang mayo. Sweet, savoury and lightly spicy, finished with toasted sesame seeds for a Korean-inflected handheld fish sandwich.

Instructions

1
Prep Pat the salmon fillet dry with paper towel and season lightly with salt. Whisk gochujang, soy sauce, honey and sesame oil together to make the glaze.
2
Macerate Shred the napa cabbage and slice the cucumber, then toss both with rice vinegar and sugar. Set aside 10 minutes to soften.
3
Sear Heat the vegetable oil in a skillet over medium-high heat and sear the salmon 3 minutes per side until it flakes easily and is opaque throughout.
4
Glaze Reduce heat to medium-low, brush the gochujang glaze over the salmon, and cook 1 minute until glossy and sticky.
5
Build Toast the brioche bun cut sides in the same skillet over medium heat for 1 minute until golden. Spread gochujang mayo on both halves.
6
Plate Stack the glazed salmon on the bottom bun, top with the drained cabbage slaw, sliced cucumber and scallion, scatter with toasted sesame seeds, and close the sandwich.
