Stir Fried Beef and Peppers

Thinly sliced beef sirloin stir-fried over high heat with bell peppers, onion, garlic and ginger in a soy-sake-mirin glaze. Cornstarch-slurried sauce clings to the meat for a glossy finish. Served over steamed rice, this quick wok dish balances savoury depth with light sweetness.

Instructions

1
Prep Slice the beef sirloin against the grain and toss with 1 tsp soy sauce and 1 tsp cornstarch in a bowl until evenly coated.
2
Marinate Let the coated beef sit at room temperature for 10 minutes so the cornstarch tenderizes the surface.
3
Prep Cut the bell peppers and onion into thin strips and mince the garlic, grate the ginger, and set aside together.
4
Heat Heat the vegetable-oil in a wok over high heat until it shimmers, then add the beef in a single layer and sear undisturbed for 1 minute until the underside browns.
5
Heat Toss the beef over high heat for 1 minute more until just cooked through with no pink remaining, then transfer to a plate.
6
Heat Add the peppers and onion to the wok over high heat and toss for 2 minutes until edges char slightly but peppers stay crisp.
7
Heat Push vegetables aside, add the garlic and ginger to the cleared center, and stir for 20 seconds over medium-high heat until fragrant.
8
Heat Pour sake and mirin into the wok and stir for 30 seconds over high heat until liquid bubbles and reduces slightly.
9
Heat Return the beef to the wok, add remaining soy sauce and sugar, and toss for 1 minute over high heat until glossy.
10
Heat Stir in the cornstarch slurry and cook for 30 seconds over medium-high heat until the sauce thickens enough to coat a spoon.
11
Finish Drizzle sesame-oil over the stir-fry and toss once to combine.
12
Plate Spoon the beef and peppers over the steamed rice and serve immediately while hot.
